Instructions
Sift together flour, salt, and baking powder.
Using a stand mixer or an electric mixer, beat together sugar, vanilla, butter, and egg. Add dry ingredients slowly and mix until cookie dough forms.
Wrap cookie dough in plastic wrap and refrigerate for one hour.
Once your hour is up, preheat your oven to 325 degrees and line a baking sheet with parchment paper.
Dust a clean working surface with flour and roll your cookie dough so that it’s about ¼ of an inch thick. Using your cookie cutter, cut out heart shapes and carefully place on lined baking sheet (about 1-2 inches apart).
Bake for about 10-15 minutes or until edges are golden. Allow to cool on a wire rack before decorating.
Create your “yellow sparkle” shapes. To do this, roll 12-15 fondant spheres, about ¼ of an inch in size. Roll another 12 spheres, this time, slightly bigger. Start molding them into diamond shapes. You may need to coat your fingers with cornstarch to avoid the fondant from sticking.
To decorate, place candy melts and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals or until completely melted. Stir to combine both ingredients.
Place wax paper on a clean working surface. Dip the frontside of each cookie into the bowl of melted candy and immediately place on wax paper.
Place your fondant shapes onto each cookie (exactly like the emoji) and allow to set, about 15-20 minutes.
